Opening as a garden-level bistro in October 1987, Cache Cache has defined Aspen’s fine dining landscape for nearly four decades. Chef Chris Lanter, who joined the team in 2000 and became partner in 2004, grounds our menu in classical French techniques applied to modern American cuisine. We prioritize clean, unpretentious dishes built on the freshest local ingredients available at 8,000 feet. Winter brings produce from local greenhouses and Front Range farms, while summer offers an abundance of Western Slope vegetables from Palisade to Delta and the North Fork Valley from Paonia to Olathe. Wine Director Alexandre Harvier, a native of Paris, has curated our wine program for over 20 years, managing a cellar with more than 1,300 references and 7,000 bottles. His dynamic by-the-glass selections complement our eclectic list representing major viticultural regions. General Manager Jodi Larner, a partner since 1989, established the warm hospitality that has kept us among the top culinary destinations in the country. Chef de Cuisine Cesar Vazquez has led our back-of-house team for over a decade, bringing creative flavor combinations and deep ingredient knowledge. Many of our staff members have remained with us for more than ten years, contributing to the consistent, heartfelt service that defines our experience.
