We are Toro, a Pan-Latin restaurant located inside the Viceroy Snowmass in Snowmass Village. Our menu reflects Chef Richard Sandoval’s vision of blending Peruvian, Brazilian, Mexican, and Ecuadorian flavors. Guests can enjoy delicate empanadas and robust grilled dishes that showcase our approach to contemporary Latin cuisine. Chef Sandoval brings global experience from his 50 locations across four continents to our Western Slope kitchen. His background includes teaching at the Culinary Institute of America and receiving accolades such as Mexico's National Toque d’Oro and Bon Appetit’s Restauranteur of the Year. We aim to bring this award-winning culinary style to our guests, offering a dining experience that spans continents while staying rooted in local ingredients and modern techniques.
