Alm and Tyson Schneller turned a Valentine’s Day blind date in a Udon Thani 7-Eleven into a thriving Paonia food truck business. Alm, inspired by her street-food-cook mother, joined Tyson on his organic farm in 2012, and together they launched 1-2-Thai in 2014. We serve authentic Thai flavors from our truck, parked at the end of Grand Avenue on Wednesdays and Thursdays from 11 a.m. to 3 p.m., and at Black Bridge Winery (Orchard Valley Farms) on Tuesdays during the season. Our menu highlights include homemade egg rolls with hoemade sauce, fresh spring rolls with peanut sauce, and Seame Balls filled with sweet red bean paste. Entrees range from marinated pork with sticky rice to various curries, stir-fries, and Pad Thai, all customizable by spice level. We offer vegetarian options and drinks like Thai tea and Thai green tea. Our dishes feature ingredients such as poblano peppers, basil, cashews, and jasmine rice, ensuring a flavorful experience for every customer.
