High-altitude vineyards in the West Elks AVA define Alfred Eames Cellars, a Paonia winery where elevation among the highest in North America yields intensely concentrated fruit. Devin Eames, son of founder Alfred, returned to steward the legacy after years of travel and exploration. The winery’s process involves hand-picking grapes at dawn to balance acidity and sugar, followed by gentle extraction in masonry open vats. Fermentation utilizes carefully selected yeasts to preserve fruit purity and terroir expression, while 16 to 20 months of aging in French oak builds structure and complexity. The resulting wines are unfined and unfiltered, released only when ready.

Visitors can explore this craft at the Tasting Room located within ZenZen Gardens. The winery offers curated quarterly shipments of their finest wines, exclusive access to limited releases, complimentary tastings, and invitations to member-only events held directly in the vineyard.
