Marble Distilling & The Distillery Inn

Authentic white marble from Yule Creek Quarry lines the walls and filters the spirits at Marble Distilling & The Distillery Inn in Carbondale. This distinctive feature gives the facility its name and mirrors the stone used in the Lincoln Memorial. The distillery produces small-batch spirits using pure Crystal River water and all-natural, high-elevation Colorado grains. Sustainability is woven into the operation, with copper pot stills that recapture 100 percent of process water and reuse energy harvested during distillation to heat the building. This efficient system saves more than 4 million gallons of water annually. Co-founders Connie Baker and Carey Shanks run the family-owned business, which operates as a transparent, open-source model. The on-site inn offers food and drink options that highlight local sourcing and partnerships with both local and national environmental non-profits.
