Opened in 1998 within a 120-year-old Main Street Victorian house, Matsuhisa Aspen stands as the first location outside of Chef Nobu’s original Beverly Hills restaurant. The dining experience splits between two distinct levels, each offering a different perspective on Nobu’s new-style Japanese cuisine. Downstairs features a main dining room defined by natural walnut accents, bamboo-wrapped ceilings, and a sushi bar spanning half the length of the space. A natural walnut cocktail bar anchors this area, while an elevator and coat check ensure accessibility for guests.
Upstairs provides a more casual setting with both indoor seating and seasonal outdoor options, along with an intimate sushi bar that many patrons prefer. The menu reflects Chef Nobu’s classical Tokyo training blended with influences from his time in Peru and Argentina. Signature dishes include Yellowtail Sashimi with Jalapeño, Black Cod Miso, White fish Tiradito, cod lettuce wraps, and king crab tempura. Other notable items are the Shrimp with Spicy Garlic Sauce and Lamb Chops prepared with a unique barbecue sauce.
