We celebrate the rhythm of the seasons on Restaurant Row in Aspen, crafting what we call World Farmhouse cuisine from sustainably raised ingredients sourced globally. Our kitchen engages traditions from Asia, Europe, and the Americas to create an eclectic yet recognizable menu meant for sharing, where no part of the world is off limits. Guests consistently praise our chicken, steak, and cheese board, noting that the flavors are so compelling they finish every bite even when not hungry. Beyond the dining room, we operate a retail shop that supports small farmers, artisans, vintners, brewers, and distillers. Our roots trace back to Avalanche Cheese Company, founded in 2008 as a 130-acre goat dairy in Paonia, Colorado. We rotationally grazed 200 mixed-breed goats to produce the best milk for our artisanal goat cheeses, which were supplied to Aspen’s restaurants, shops, and hotels from our Basalt creamery. In 2012, we expanded into cured meats, earning awards from the American Cheese Society and the Good Food Awards. When we sold the farm and closed the creamery in 2016, we transitioned from manufacturer to retailer, allowing us to continue supporting the producers who define our identity.
