Miner’s Claim Restaurant has celebrated 25 years in Silt, transforming a commercially zoned cabin purchased by owner Christian in June 1997 into the largest martini list on the Western Slope. Christian, a culinary school graduate who spent his early career in Aspen rubbing elbows with celebrities like Mick Jagger and Hunter S. Thompson, moved to Silt seeking a quieter life. He constructed the restaurant using locally sourced materials, including 450 pounds of rusted corrugated tin, 2,000 pounds of granite, and antique bricks from Aspen. The result is a space that balances exceptional casual dining with fine-dining quality, earning 15 Local’s Choice awards from the Post Independent in 2025. We serve lunch and dinner Monday through Saturday, featuring happy hour specials from 4 to 6 PM. Our team is proud of our French fries, salads, and steaks, as well as our extensive wine selection. For guests staying at local hotels or the KOA Campground, we offer a free shuttle via our custom-built 6-passenger golf cart. This DMV-registered vehicle, designed by Lifestyle Golf Carts of Colorado Springs, features Tesla-inspired technology and a custom sound system to transport you safely to our doors.
