Fresh-milled stoneground flour and hand-shaped sourdough loaves define Mountain Oven, an organic bakery and millhouse in Paonia, Colorado. Run by Chris Sullivan and Dana Whitcomb, we grind Colorado-grown grain daily using our New American Stonemill to create whole grain flours available in 1 kg and 2 kg bags for home bakers, as well as retail quantities for wholesale distributors. Our sourdough breads are canvas-risen and baked on a stone hearth, fermented with "Mama," our high-altitude sourdough culture, ensuring optimal flavor and digestibility. We craft artisan pastries from scratch using seasonal fruits, herbs, and edible flowers to capture the bounty of the valley, preserving local harvests for year-round enjoyment. Sourcing organic ingredients directly from nearby farms is central to our mission of building a regional grain economy that supports rural resilience and food security. Customers can order online for pick-up on Mondays and Fridays, or find our products at local farmers markets and through regional wholesale distribution. We believe in localizing the food system to support community, farmers, and the land, pouring our hearts into creating a regional grain economy that reaches surrounding mountain communities.
