The first legal Colorado Bourbon post-Prohibition emerged from this Palisade distillery, establishing it as one of the state’s earliest craft producers. Operating for two decades, the facility mills, mashes, distills, ages, and bottles its own spirits onsite using local grains and fruit rather than blending external supplies. Guests visit the tasting room to sample flights on the outdoor patio, a space that welcomes friendly dogs and well-behaved kids. Food service comes from a kitchen housed in a historic trolley, where Chef Mike prepares dishes from scratch using locally sourced ingredients. The menu features salads, apps, tacos, pizzas, burgers, and sides, available for lunch, dinner, or late-night snacks. Patrons can dine in or order online for takeout. The establishment is known locally as the Happiest Block in North America, serving as a gathering spot for neighbors and travelers alike.
