Rootstalk Breckenridge

Rootstalk serves dinner seven nights a week, offering a seasonal menu that showcases inspired cooking and highlights great wine and cocktails. The restaurant, led by James Beard award winner Matt Vawter, aims to connect guests with local farmers, ranchers, and producers through its creative exploration of food. Rootstalk also offers a daily après menu from 4:00-5:00pm, featuring a small selection of food and drink offerings, in addition to its normal a la carte and Chef's 7 Course Tasting menus.
