Chef Matt Vawter, our 2024 James Beard Award winner, leads the kitchen at Rootstalk Breckenridge as we serve dinner seven nights a week. Our seasonal menu highlights inspired cooking that connects guests with local farmers, ranchers, and producers through creative exploration of food. We offer a curated beverage program featuring great wine and craft cocktails, alongside notable non-alcoholic options. Reservations begin at 4:00pm daily. We also host a daily après menu from 4:00-5:00pm, providing a small selection of food and drink offerings before our regular service. Guests may choose from normal à la carte selections or the Chef’s 7 Course Tasting Menu. Our space is designed for intimate dining, encouraging connection among guests and with our team of seasoned professionals. We ask that you dress for comfort but refrain from wearing ski or snowboard boots. Parking is available in the East Sawmill Lot to the west of our location, which is free after 5pm. We do not have private parking or allow outside wine.
