Chef Oscar Cuevas spent over twenty years mastering Japanese kitchens before opening Taqueria Cuevas in Ignacio, blending his training with the Mexican street food of his upbringing. What began as a food truck in 2019 evolved into a brick-and-mortar destination on Goddard Avenue by 2023, though the truck still visits local farmers markets and wineries. The menu honors two distinct traditions without compromise, serving real al pastor tacos alongside tonkatsu ramen and katsu bowls. Guests often order a torta and a katsu bowl at the same table, or pair smothered burritos with sides of gyoza. Specialties include grilled shrimp, fish, and chicken tacos topped with house chipotle aioli, coleslaw, and candied red onion. Vegetarian options abound, featuring tofu fried rice, panela tacos, nopales tacos, and veggie yakisoba. We offer pickup and delivery, making it easy to enjoy authentic JapaMex fusion for dine-in or takeout.
