Built in the 1880s at Spring Gulch and moved to Carbondale after the mine closed in 1916, our home sits as a restored miner’s shack on the edge of town. We uncovered midcentury linoleum flooring and hidden ‘60s-era Budweiser cans, preserving the character of the working folks who lived here before turning this unremarkable structure into a gathering spot for rolling kitchens and taps. Our roots trace back to Johnny McGuire’s Deli in Aspen, opened in 1990 by Terrance McGuire and John Hoffman, where the famous Trucker sandwich became a local staple. When rising rents made those fresh, house-baked bread sandwiches impractical, Terrance hit the road, merging his love of jam bands with street food culture at festivals like Bonnaroo and Coachella. Partnering with landscape architect Rich Camp, we created an incubator for roving chefs and a taproom where real people gather for real good times. We serve specialty cocktails like the Busy Bee and Buzzy Bee, an invigorating blend of Western Slope honey, apple, and fresh ginger brewed in-house without refined sugar or booze. The Buzzy Bee lets you add your choice of spirits. Live music fills the air as we host a rotating selection of local food trucks, offering a unique dining experience that honors the history of the house while celebrating the creativity of today’s chefs.
