Chef Kate Van Rensselaer Rench’s journey from sculptor to Steamboat Springs’ dining pinnacle began with a Jacques Pepin award from the French Culinary Institute and a tenure at Jean-Georges in Manhattan. Now, she crafts seasonal menus featuring premium naturally raised meats, sustainably sourced seafood, and produce from small family farms at Café Diva. The restaurant occupies a distinct space in the Northern Rockies, having expanded from just four tables to become a recognized destination for French-Asian fusion cuisine. We seat guests from 5:00 pm to 9:00 pm seven nights a week, welcoming walk-ins but recommending reservations well in advance during the winter months. Our cellar houses over 300 wine selections sourced from global vineyards, paired by three sommeliers who tailor choices to your taste, meal, and budget. The dining rooms offer a warm mountain contemporary ambience where a veteran staff provides personal attention. We do not offer carry-out service at this time, and a $25 per person fee applies to cancellations made 24 hours prior or sooner. Gift cards are available via our website or in person, issued digitally rather than as paper certificates.
