Troy Casey launched his brewery in the fall of 2013, bringing old-world brewing techniques to Glenwood Springs. The operation relies on over 99% local Colorado ingredients, fermenting and aging beers in vintage oak barrels. A specific mixed culture of saccharomyces, brettanomyces, and lactic acid bacteria drives the process. This method produces unfiltered, 100% bottle-conditioned beers that are complex yet balanced.
