Maryanne and Harley Sefton founded PARC Aspen to preserve the local identity of our town, bringing us to life without prior hospitality experience but with deep intention. Located on E Hyman Ave, we operate as a fine dining destination where seasonal bounty meets global inspiration. Chef Stefano Schiaffino leads our kitchen, blending French discipline with his Peruvian heritage and worldly experience. Our menu highlights Colorado’s seasonal ingredients through dishes like 11-Year Bourbon Smoked Elk Loin, cast iron-seared steaks, organic salmon, Mushrooms & Polenta, and Foie Gras Chaud Froid. We source thoughtfully from Colorado farms and purveyors whenever possible.
Our wine program, directed by John Mckenna, stands as one of the most distinguished in Aspen. We hold Wine Spectator’s Best of Award of Excellence, recognized three years running, with a list featuring over 1,300 curated labels from iconic estates and emerging producers worldwide. Our selections highlight Champagne, Bordeaux, Burgundy, and standout wines from Italy, Spain, and leading American regions. We serve dinner Wednesday through Sunday, starting at 5:00 PM.
