Prospector

We are Prospector, a restaurant in Rico, Colorado, serving small plates in a casual environment. Our chef-driven kitchen and bar offers a menu designed to be shared among groups, with dishes prepared to order. We feature a bar with a selection of craft cocktails and beers from local breweries, including Ska and Telluride Brewing Company. Chef Eamonn O’Hara brings his experience as the former Executive Sous Chef at a Los Angeles restaurant, where he worked with Wolfgang Puck, to our quiet town. Our menu includes signature cocktails like the Mexican Logger, Old Fashioned, and Manhattan, alongside craft beers such as True Blonde from Ska Brewing. We provide a cozy setting in the San Juan Mountains for ethical food served in a communal style, perfect for quick bites or gatherings with friends and family.
