Carly Van Hof Thomson and chef Jeremy Storm launched Sage Fresh Eats in April 2021 at Old North Zia. This fast-casual restaurant operates as a farm-to-table hub where the menu rotates daily based on what local farmers are growing. The kitchen is known for homemade sourdough focaccia baked fresh every morning, which serves as the bread for sandwiches or a side for soups and salads. The menu features meat-based and vegetarian soups, grain bowls, and scratch-baked desserts that are always gluten-free and vegan. Sage sources the majority of its natural and organic ingredients from local growers, utilizing everything from premium produce to "seconds" that are perfectly ripe but don't look perfect for market display. The business also manages a community kitchen space, provides weekly lunches for Mountain Middle School, and runs a full-scale catering operation. Customers can dine in or take their meals to-go for a picnic on a nearby Colorado adventure.
