Chef Pete’s famous Smash Burger and Grilled or Blackened Chicken Sandwich anchor the menu at our Trout Bar, where we pair these staples with locally brewed ales and aged whiskey. Located in Clark, CO, we serve as a timeless retreat for good company, welcoming everyone from weary cowboys to adventurous travelers. As a Colorado native who began cooking at age nine, Chef Pete brings a deep connection to the land and its heritage to every plate, utilizing local ingredients and foraged wild mushrooms to create nourishing meals that reflect the region's history. His culinary background spans French fine-dining, Mexican Nuevo, and Mediterranean-inspired cuisine, adding depth to the menu’s old-west charm. For gatherings, we offer the Lower Glen, a ceremonial space overlooking the Elk River with a large meadow for tents, and the Elk Lounge, an indoor dining room featuring live music capabilities and a private bar. Onsite catering allows Chef Pete to craft menus for weddings, reunions, and retreats, ensuring the celebration matches the rustic elegance of the setting. We also provide cabin rentals and parking for groups of 25 to 200, making us a versatile destination for events that blend nature with modern taste. In 2020, we led the Snow Bowl kitchen to serve over 21,000 free meals to laid-off hospitality employees and community members during the pandemic, demonstrating our commitment to the local area that extends beyond the dining room.
