Tony and Marie Roan bring East Coast Italian-American cuisine to downtown Dolores, operating The Italian inside the historic Southern Hotel. The couple, who spent over thirty years in Las Vegas hospitality, settled in Dolores to share their expertise in fresh ingredients and traditional cooking.
